Ingredients
  

  • 5 ripe tomatoes
  • 1 courgette diced
  • 5 cloves garlic minced
  • 1 large onion finely chopped
  • 200 g tomato paste ½ pack
  • 1 tsp cumin seeds
  • 1 tsp onion granules
  • 1 tsp dried oregano
  • Salt to taste
  • Tabasco sauce to taste
  • 2 tbsp olive oil

  • Dice half of the tomatoes, onion, and courgette—these will be sautéed for richness.

Cooking the Salsa to Enhance the Flavors

  • Heat olive oil in a large pan over medium heat.
  • Add the chopped onion and cook until soft and translucent.

  • Stir in the courgette, then the diced tomatoes and garlic, and cook for 5 minutes.

  • Pour in the tomato paste and blended tomatoes, stirring well to combine.

  • Add salt to taste.

Bringing It All Together

  • Let the salsa simmer for 10 minutes, stirring occasionally.

  • Add Tabasco sauce to taste, adjusting the heat level to your preference.
  • Once the salsa thickens slightly, remove from heat.

Storing & Serving

  • Let the salsa cool slightly before transferring it to a sterilized jar.
