Ingredients
  

For the Spiced Taco Beef:

  • 500 g ground beef
  • 1 large onion finely chopped
  • 4-5 garlic cloves minced
  • 6 chestnut mushrooms finely diced
  • 1 tsp garlic granules
  • 1 tsp cumin seeds
  • ½ tsp cinnamon
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 100 ml water

For the Cheesy Nacho Sauce:

  • 50 g butter
  • 50 g flour
  • 400 ml milk
  • ½ tsp cayenne pepper
  • Salt to taste
  • 150 g cheddar cheese grated

For the Toppings & Assembly:

  • 1 small onion diced
  • 1 tomato diced
  • ½ cup sweetcorn
  • ½ cup cooked lentils
  • ½ avocado sliced
  • 1 spoonful of homemade tomato salsa
  • 1 tbsp cottage cheese optional
  • Tortilla chips for serving

Instructions
 

Cooking the Spiced Taco Beef

  • Heat a pan over medium-high heat and add the ground beef. Cook until browned, breaking it up with a spatula.

  • Remove the beef from the pan and set aside. In the same pan, add a little oil if needed and sauté the onion, mushrooms, and garlic until softened.
  • Return the beef to the pan and stir in the garlic granules, cumin, cinnamon, smoked paprika, and oregano.

  • Add 100ml water, mix well, and let simmer for 5 minutes, until the flavors meld together and the mixture thickens slightly.

Making the Cheesy Nacho Sauce

  • Melt the butter in a saucepan over medium heat.
  • Whisk in the flour and cook for 1 minute, stirring constantly.

  • Slowly pour in the milk, whisking continuously to avoid lumps.

  • Add the cayenne pepper and salt, then simmer until thickened.
  • Remove from heat and stir in the grated cheddar cheese until smooth and creamy.

Assembling the Taco Bowls

  • Start with a base of the spiced beef in a bowl.
  • Add diced onion, tomato, sweetcorn, lentils, and avocado.
  • Spoon over a generous serving of homemade tomato salsa (recipe here).
