Turkey Boeuf Salad -A Lighter Take on a Romanian Classic

This turkey twist on the classic Romanian boeuf salad is a lighter, flavour-packed option that still delivers all the comforting familiarity of the original. It’s great for festive tables or meal prep — and the golden broth you’re left with is liquid gold for future soups or risottos.

Ingredients
  

  • 500 g turkey breast
  • 1 small onion
  • ½ celeriac
  • 500 g carrots approx. 4 medium
  • 3 medium potatoes
  • 2 bay leaves
  • 5 –6 peppercorns
  • 200 g homemade mayonnaise
  • 2 tbsp Dijon mustard
  • 4 gherkins
  • 50 g homemade yoghurt or cottage cheese
  • Salt and pepper to taste

Instructions
 

  • In a large pot, combine the turkey breast, whole onion, peeled carrots, celeriac, bay leaves, peppercorns, and a pinch of salt. Cover with cold water and bring to a gentle boil. Boil the potatoes separately.
  • Simmer for 45 minutes or until the turkey is cooked through and vegetables are tender.
  • Remove turkey and vegetables from the pot. Let everything cool to room temperature. Reserve the cooking liquid — it's flavourful and perfect for soups, risottos, or sauces.
  • Dice the cooled turkey and all vegetables into small cubes. Dice the gherkins finely.
  • In a large mixing bowl, combine the diced ingredients.
  • In a separate bowl, mix together the homemade mayo, yoghurt or cottage cheese, and mustard. Add salt and pepper to taste.
  • Fold the dressing into the diced mix until everything is evenly coated. Chill before serving.

Notes

The broth from boiling the meat and vegetables is packed with nutrients and umami flavour — don’t throw it out! Use it for risottos, stews, or drink it warm with a sprinkle of salt.
You can use chicken instead of turkey, or even keep it vegetarian by omitting the meat and adding more root vegetables or pickles.
For a smoother salad, blend the yoghurt and mayo before combining.
